Which buildings must be destroyed in mission 4 TPR ?

If I'm not mistaken - usual ones and anything related to weapon production (including Tannery).

than just destroy everything except the school and the village without weapon making houses (village in the middle)

The story (at least in English) tells you not to hurt the innocent villagers which have been enslaved by the rebels, just to destroy their weapons production and free them from the rebels. If you destroy the entire village you will lose because you killed the innocent villagers (which are your own people, just captured by the enemy). So only destroy buildings like the barracks, weapons workshop, etc. and leave the others standing.
