Producing Sausages TSK/TPR

Hello everybody. I'm new here and I found it's good to see that an old game like K&M still has many fans. I've just restarted playing this week, and I got a question:
Does anyone any idea of how producing sausages effectivelly? Maybe a number of Swine Farms/Butcheries? How do you do? It always finishes fast.

5 farms is 3 pig farms is 1-2 butchers. Thats how i do it although i normally got more than this.

Or 11 corn farms 6 pig farms and 3 butchers should feed 100 serfs (make sure you have 2 inns)

That's with only sausages and no other source of food?
And this is a bit off topic but im wondering how many servs you guys have normally. That is at the end of the game of course.

Its easy to feed your whole town and maybe a bit of your army by producing sausages.
I use about 75-85 serves.
