Depends. E.g. don't use knights against rebels/lancers/pikes.

For general strategies, use swordfighters. Sure they are expensive, but they are solid-all round units. Their only weakness is their cost. Knights are stronger, but they are also much more expensive than swordfighters. An army of swordfighters and bowmen can beat any other army if you choose the right spot to fight.
